Gonzales, Louisiana is the "Jambalaya Capitol of the World" and every year they hold a Jambalaya jubilee to celebrate this local specialty made with rice, sausage, chicken, seafood, onions and a lot of Cajun spice and love cooked up in a cast iron kettle. 102 teams compete for the championship title and one thousand dollars.
