One Recipe, Two Ways: Open-Faced Veggie Sandwiches with Hummus

It’s spring! Are you jumping up and down and dancing in circles and howling at the moon like I am? No?

Well, now that it’s spring, I feel like eating a smidge lighter. Not too much lighter … don’t get sad. But something slightly more springy and festive and moon-howly (yes, it’s a thing). And, on top of that, there’s BREAD here.

What I’ve done is come up with an insanely simple open-faced vegetarian bruschetta-type sandwich — one version fit for the littles, and the other version fit for you! We’ve got regular hummus with carrots and apples and cucumbers for the kids, and pesto hummus (regular hummus with pesto swirled in) with carrots and roasted red peppers and radishes for the adults. And SPROUTS. I almost forgot the sprouts. Oh, and there’s chips! Just make these. And you’ll be howling at the moon. Promise.

One Recipe, Two Meals: Open-Faced Veggie Sandwiches with Hummus

6 slices crusty bread (from a large loaf or baguette)

1 cup hummus (original flavor)

1/2 cup thinly shaved carrots (a vegetable peeler works great)

1/2 cup thinly sliced apple

1/2 cup thinly sliced cucumber

1/2 cup alfalfa sprouts

1/3 cup pesto (jarred or homemade, your choice!)

1/2 cup roasted red pepper slices (jarred or homemade, up to you!)

1/3 cup thinly sliced radishes

Chips as a side, because chips

This is crazy-simple to slap together. You can do both the kid version and the adult version at the same time. First, equally divide the hummus between two bowls, and add the pesto into one bowl. The pesto hummus is for your adult mouth!

Take three slices of the crusty bread and slather with the original hummus. Top with half of the shaved carrots, apple slices and cucumber. Top with half of the sprouts and serve it just like that to the kiddos! With the chips, natch.

Now, slather the remaining three slices of crusty bread with the pesto hummus, and top with the rest of the carrots, the delicious roasted red peppers, radishes (spice!) and a topping of sprouts. And chips.

Super-crazy-simple veggie lunch or dinner be SERVED.
