These soft and crackly cookies are a staple in Italian bakeries, but you don't have to be an Italian baker to replicate the signature look. For the crinkled effect, simply roll hand-formed balls of chocolate cookie dough in confectioners' sugar until each ball is generously coated. Adding espresso powder complements (and heightens) the chocolate flavor — it's subtle, but totally worth it. And since almonds are a classic ingredient in Italian baking, try spiking the batter with 1/4 teaspoon almond extract.
