On this week's Chopped: Brunch Boxes episode, the competitors found pancake mix in their entree round basket, along with an emu egg, Bloody Mary mix and lobster. Two out of the three remaining competitors ingeniously decided to use the pancake mix as a batter for their lobster and made it through to the dessert round. This recipe for Indian-Inspired Corn Dogs with Mango Dipping Sauce also makes clever use of pancake mix in a form other than the obvious breakfast dish. Plus, it's a great way to recreate the state-fair staple at home for a fun and nostalgic meal with your family.

A little cornstarch and cornmeal are all you need to jazz up store-bought pancake batter in order to create that classic corn dog crust. But the unique touch is the addition of the Indian spice mix garam masala. The recipe even goes beyond that, replacing typical hot dogs with kielbasa. You're looking at a modern-day corn dog taken to the next level.

Before preparing the corn dogs, make the easy dipping sauce. Just blend together chopped mango, chopped jalapeno, mayonnaise, lime zest and juice, and chopped cilantro. The dipping sauce offers a nice cooling counterpoint to the spices of the garam masala in the corn dog batter.

To make the prep of the corn dogs easy, pour the batter into a pint glass so that you can easily dip each sausage into the glass to get it evenly and thoroughly coated. Fry the corn dogs no more than two at a time to ensure they don't stick together. Once the dogs are out of the fryer, season them liberally with salt and serve with the dipping sauce. It only takes 25 minutes to prepare and cook this dish, leaving you more time to spend with your family.
