Chopped Junior-Inspired Lunchboxes: BBQ Broccoli Rabe Salad

Try a new recipe idea that will set your lunchbox apart from the rest, Chopped Junior style.

The young contestants on this week’s episode of Chopped Junior were faced with some pretty tough ingredients in their mystery baskets, like barbecued-flavored larvae in the appetizer course. They also faced off with broccoli rabe (aka rapini), which is similar to broccoli, though it’s thinner, with smaller crowns and longer stalks. It can also be bitter and should be blanched first to help mellow its flavor.

Inspired by barbecue and broccoli rabe, we decided to doctor up a classic mayonnaise-based broccoli salad recipe with a touch of prepared BBQ sauce and crispy fried onions. You can do this to your favorite recipe and use broccoli or broccoli rabe — just be sure to blanch it first!
