Then Guy uses the chicken in two different recipes: first, Smoked Chicken Minestrone soup, a hearty soup loaded with tomatoes, potatoes, zucchini, cabbage, navy beans and chunks of tender smoked chicken; and second, Smoked Chicken Cannelloni, more smoked chicken combined with ricotta, Parmesan, spinach and tomatoes, piped into tubes of pasta and baked with a creamy roasted red pepper sauce.
