Manchego with Quince Paste

Ingredients
1 1/4 pound Manchego
1 (14.1-ounce) package quince paste (membrillo), available at some specialty food shops and some
supermarkets (for stores call Goya Foods, tel. 201-348-4900)
Directions
Cut cheese into 1/4-inch-thick wedges, discarding rind, and cut quince
paste into 1/8-inch-thick rectangles. Top cheese wedges with quince paste wedges and arrange on a
platter.
