Shrimp Cocktail

Ingredients
6 plum tomatoes, diced
1 green bell pepper, diced
8 green onions, sliced
1 cup peeled and diced cucumber
2 hard-boiled eggs, whites only, chopped
1 clove garlic, crushed
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons fresh cilantro leaves, chopped
2 tablespoons fresh parsley leaves, chopped
1 teaspoon salt
3/4-pound ready-to-eat shrimp, chopped
1 head butter lettuce, leaves separated and cleaned

Combine tomatoes, bell pepper, green onions, cucumber, and hard-boiled
egg whites in a large bowl; set aside. In a separate bowl, whisk together garlic, olive oil,
vinegar, cilantro, parsley, and salt. Add garlic mixture to tomato mixture. Add shrimp and toss to
combine. Serve over butter lettuce leaves.
