Judging doneness:
A cheesecake is considered done when the center is still a bit wobbly. Don't worry - the cake continues to cook as it cools in the residual heat of the oven and will set completely when refrigerated. To test for "wobble," shake the pan slightly (if using a water bath, take care not to splatter hot water onto the cake or yourself).
