One of the sweetest vegetables, beets come in a variety of colors from the traditional dark purple to yellow to white to candy-striped. They can be roasted, steamed, boiled, baked, or pickled for an accompaniment to a main course or served as the centerpiece of a traditional Central and Eastern European borscht soup. The best way to tell if beets are fresh are if their greens are still attached and they are not wilted and still colorful - they're edible, too, and can be prepared as any dark leafy green. If the greens are gone, check to make sure that the beet itself is firm.
