As the saying goes, age doesn't matter unless you're talking about a wine or a cheese -- and with cheddar, age makes all the difference. A firm cow's milk cheese prized for its savory, tangy taste, cheddar is made principally in Great Britain and the United States. Cheddar is categorized by flavor -- mild to extra sharp -- depending on how many months, or even years, it has been aged. It is often colored yellow or orange with vegetable dyes. While American cheddars, principally from Vermont and Wisconsin, have been improving, the gold standard is English cheddar. English cheddars generally have a drier texture and full-bodied, almost spicy taste.
