Holland's most famous export (besides tulips) is this smooth yellow cheese you often see packaged in red wax and cellophane. Made with cow's milk, Gouda is generally known for its even, mild taste and smooth texture. It is also available smoked for extra flavor. But the real treat is Gouda aged for more than 18 months. It turns amber-colored and the taste is almost sweet, like burnt caramel or rich butterscotch. Some supermarkets and specialty shops are now carrying varieties aged as long as six to 10 years.
