Mascarpone is a double or triple-crème Italian cow's milk cheese that is as close to whipped cream as cheese can get. It is soft, creamy, rich and high in fat. (What's not to like?) It is a trademark ingredient in the famed Italian dessert Tiramisu, but is also used in savory dishes to add richness and body. Residents of Italy's Lombardy region, where it originated, just spread it on bread, sprinkled with some sugar, cocoa or cinnamon. It can be hard to find -- and expensive when you do -- but this delicate delight is worth hunting around for.
