Q: How do you get your barbecue sauce to cling to your meat while cooking chicken?

A: Generally, that's usually not a problem, and that's why there are those wonderful mop brushes, that look like a mop on a long stick, and get them really soaked up with the sauce, and brush them on in the latter part of the cooking. If you dump all the sauce on at the end, it will fall off. It's putting the layers on that dry as they go, you don't want it icky and crusty and burned; you have to be careful with barbecue sauces. A lot of people have trouble with barbecue sauces -- they have a lot of sugar in them and they can burn -- so be careful they don't burn when you do the mopping.
