Souffle Gal: I have a problem melting chocolate. Instead of melting it gets thick and clumps up into a ball. What am I doing wrong?

Jamie: Sounds like you're melting it too fast and too hot. When chocolate is made, it's a delicate mixture of cocoa solids. So you want to put chocolate, smashed into small pieces, in a bowl over simmering water and allow it to melt slowly in about ten minutes. It should remain nice and shiny, and not form into a ball. If you were going to do it in a microwave, I suggest doing it on a very low setting. If you heat chocolate too fast, it separates too fast, like milk does when you add lemon juice to it.
