with Gale Gand on Chocolate Chip CookiesJeanne: Gale, whenever I bake chocolate chip cookies, they turn out flat. What am I doing wrong?
Gale: Jeanne, they're spreading because of a high amount of butter and sugar. You may want to increase your flour slightly to keep them from spreading as much. What can happen is that some butters vary in the amount of water they contain, and that changes the recipe. Or your flour may be drier or moister, depending on where you live in the country. That influences how a recipe turns out.
