Food Network Kitchens on Chewy Cookies

Oaty: How can I get my cookies to be chewy instead of crispy?

Lynn: The amount of liquid you put in your cookies and the amount of sugar makes them chewier, the amount of time you bake makes them crispier. If you under bake, that will help.

Katherine: The overall moisture of the cookie. Sometimes using corn syrup for some of the sugar, or brown sugar instead of white sugar, will make them chewier. Also, not overworking the batter, which will make them tough.
