Chopping Chocolate
A large block or bar of chocolate needs to be cut into small pieces so it melts evenly. Do this with a serrated or cook's knife. Grip the handle and place your palm on top of the knife. Use a rocking motion to cut or shave the chocolate into small bits.
To make chocolate curls, start with a bar that is just slightly soft by setting it in a warm spot or heating it in the microwave for 15 seconds. Carefully, but firmly, draw a vegetable peeler across the bar of chocolate in long strokes. The chocolate will curl as you shave.
For more narrow curls, use the thin side of the chocolate bar. For wider curls, use either a larger block or a broader edge.
Since the heat from your hands can melt the curls, let them fall onto a piece of parchment or waxed paper so you don't have to handle them too much. Scoop up the paper or use a spoon to scatter the curls over your favorite dessert. Instructor: Krista Ruane
