Fold Omelets

Folding an omelet takes a little practice. Here we're stirring the eggs in a nonstick pan. Use a fork or a spatula until the eggs begin to form soft curds.

At this point, stop stirring and let the eggs set to the desired consistency, shaking the pan to prevent sticking. If you're in doubt, run a fork or spoon around the edge of the omelet to make sure it is not sticking.

Tilting the pan away from you, slide the omelet to the edge of the pan and begin to roll the edge of the omelet over with a fork. This forms the first part of the roll. Think of it as folding up a business letter.

It is at this point that you would add any filling.
PHOTO
Turn your grip and twist your wrist to roll the omelet from the pan to a warm plate.
