When traveling in India, it's hard not to recognize the diversity that exists - and Indian cuisine is no exception. While vegetarianism is prevalent in much of the country, particularly in the south, climatic conditions and historical influences have resulted in a diverse outlook on food. In the north, meals resemble Middle Eastern or Central Asian cuisine and it's common to eat a great deal of meat, while the south relies more on rice and vegetarian meals. The western part of the country also displays strong Central Asian influences, while the east has been greatly influenced by Eastern Asian cuisine. Yet, although cooking styles vary from region to region, spices play a huge role in all Indian kitchens.


1. Southern vegetarian food is eaten without utensils. Instead, food is scooped up using the right hand.

2. Fish and coconuts are widely used in coastal kitchens.

3. Tipping is extremely uncommon in India, except in swanky establishments in major cities. In places where tipping is optional, you only need to leave a few rupees, not a percentage of your bill.
