 1. Prepare ingredients Cut corn off the cob for the sauce that will accompany the salmon.
 2. Make the sauce Add coconut milk to the simmering aromatics, reserved corn cobs, bruised lemongrass stalks, galangal, bruised kaffir lime leaves, and white pepper. Let reduce.
 3. Sear the salmon In a large non-stick saute pan, add seasoned salmon fillets, flesh side down. Saute for about 2 1/2 minutes and place pan in the oven to roast for 6 to 7 minutes.
 4. Plate the dish Place salmon fillet on a prepared spinach bed and pour sauce around the fish.
 5. Garnish Top with minced lemongrass and lime leaves.
