 1. Chop Preheat oven to 350 degrees F. Dice yellow squash, zucchini, and onion.
 2. Saute Saute squash in vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. In a separate skillet, saute onion in butter until softened.
 3. Drain Line a colander with a clean tea towel and place cooked squash inside. Squeeze excess moisture from the vegetables and set aside.
 4. Mix In a mixing bowl, combine squash, onions, sour cream, salt, pepper, garlic powder, and cheddar cheese.
 5. Bake Pour mixture into a buttered casserole dish and top with crushed butter crackers. Bake for 25 to 30 minutes.
 6. Serve Spoon onto warm plate or bowl and enjoy!
