 1. Grate Grate potatoes on a large-hole grater and place potatoes in a bowl of cold water to rinse.* Squeeze out excess water.
 2. Mix In a large bowl, mix potatoes, egg, milk, baking powder, nutmeg, salt, pepper, and flour.
 3. Fry In a skillet, heat peanut oil and fry small mounds of potato mixture until golden, about 5 minutes per side.
 4. Serve Serve with caviar, applesauce, smoked salmon, or creme fraiche.
