1. Pour Pour hot water over rice noodles and let sit 15 to 20 minutes.
2. Mix Combine lime juice, chili paste, fish sauce, and sugar. Pour into a non-stick skillet and bring to a boil.
3. Poach Add shrimp to skillet and reduce heat to medium-low. Cook the shrimp 3-4 minutes, or until curled and pink but still slightly soft to the touch.
4. Serve Sprinkle shrimp with cilantro. Pour mixture over the drained rice noodles and serve.
