1. Prep Preheat oven to broil. In a shallow dish, combine bread crumbs, salt, pepper, and cayenne pepper.
2. Coat Brush sides of 3/4-inch thick pork chops with Dijon mustard. Dredge chops in seasoned bread crumbs.
3. Arrange Arrange pork chops on wire rack set on top of a half sheet pan. This will allow excess fat to drip to the bottom of the pan.
4. Broil Place pan under broiler and cook on both sides until coating is brown, about 5 minutes on each side.
