1. Prep Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Pour rum over raisins and cook in microwave for 25 seconds; allow to rest 10 minutes.
2. MixMix apples, sugar, lemon juice, raisins, and cinnamon in bowl.
3. CombineCombine egg whites and olive oil to create a wash. Combine sugar, panko, and almonds to create crumb mixture.
4. AssembleBrush phyllo dough with wash, sprinkle with crumb mix. Repeat four times, the last time spooning the apples onto the bottom third of the dough leaving a 2-inch border from the three edges.
5. RollRoll the phyllo over once, then fold in the sides. Continue to roll gently. Place strudel seam side down on baking sheet, brush with wash, and sprinkle with sugar.
6. BakeBake for 20 minutes and allow to cool before slicing with a serrated knife.
