Favorite food: Yook gae chang — spicy Korean shredded beef soup. It's pure comfort food for me

Food you won't go near: Intestines, ajwain, marjoram sometimes, Japanese mountain yam

Culinary inspiration: My mother and mother-in-law, both excellent cooks; the many "ethnic" restaurants of NYC
