Sausages

Almost every culture has a tradition of sausage making and not just using pork. But there is no question that pork yields some of the best sausages around. Pork sausages are made with ground, lean pork (or a mixture of pork and other meat) mixed with fat and seasonings. In order to ensure that the sausages are juicy, the usual proportion of lean to fat is about three to one. The mixture may be stuffed into casings, sautéed in patties, or cooked loose, like ground meat.

Pork sausages are excellent grilled, roasted or sautéed. You may also buy pre-cooked or cured sausages (such as pepperoni) that need not be cooked. Some sausages, such as the Cajun andouille, are also smoked.
