Available year-round, shrimp can be purchased fresh or frozen.

Fresh
-- Should be prepared on the same day of purchase.
-- For temporary storage, rinse shrimp in cold running water and pat dry. Wrap in damp paper towels and then place in a plastic bag.
-- To freeze, keep tightly wrapped to avoid freezer burn.

Frozen
-- Buy while still frozen if you can; thaw by dipping in cold water.
-- Make sure it doesn’t smell like ammonia or have a fishy odor.
-- Another sign of deterioration is called melanosis which causes the appearance of black spots along the sides and heads of shrimp.

Preparing
-- Rinse and pat dry
-- To devein, peel shrimp and then make a slit along the back. Take out the vein with the knife and rinse in cold water. For more, check out our video demo.
