An absolutely yummy variation of fried mozzarella (and I don't like eggplant!). Especially wonderful in the summertime when the eggplant, tomatoes and basil are available at farm stands (or your own garden) and picked only hours ago!

Agree with other reviewer, this makes eggplant great even if you don't like it.
