I actually saute the garlic (don't like it raw), oil and crushed red pepper in the same pan as I saute the salmon in, add lemon and a little white wine at the end and then toss the hot past with arugala. It was very quick and easy to make- perfect option for a weeknight dinner. The salmon was great and the bed of spinach leaves looked great and tasted they went well together. The pasta sauce needed a little something, perhaps wine or shallots. The wheat pasta was great! I couldn't really tell the difference between that and regular pasta and it is such an easy way to incorporate whole grains into the meal. I thought it was going to be a light meal but everyone was really full arfterwards! I will make this recipe again. Thanks! One change I made, since we don't care for raw garlic, was to saute the garlic after removing the salmon from the skillet. Then I added the basil, capers, lemon zest and lemon juice to the skillet, stirred, and poured all of it over the spaghetti. Next time (which will be SOON), I will also wilt the spinach a little before serving. This dish is so refreshing yet it is very filling. I just served it with garlic bread and a side salad. She's not a huge fan of Salmon so I substituted with Mahi-mahi on her dish. I really liked the fish and pasta combination but could have done without the spinach and made a nice salad to complement it instead of being in it. With that said I did really enjoy the pasta and the fish, it's hard to get her to respond to any fish so it was good to get a positive response. I also added some sun-dried tomatoes to the fish when it was in the skillet, then dumped them cooked into the pasta. Added some depth to the pasta. All in all I would suggest the recipe with some modifications just because we're used to bold filling flavors and the "spa" feel of the dish was definitely there. Good healthy dinner. I cooked the salmon a little longer and seasoned with coarse salt and lemon peper. I really wouldn't change anything, except cooking salman longer but that is to each his own. I used the whole box of whole wheat pasta (13 oz.) so there would be leftovers. So, I added an additional tablespoon of oil, extra garlic and also added some of the pasta water when I combined everything. It tastes so heavenly. I will be making this all the time now! I sauteed the spinach in a little garlic & O oil ahead just until wilted. I also added an extra T-spoon of O oil to the pasta when combing it w/ the sauce. In addition I roasted the salmon by brushing on O oil & salt & pepper @ 350 for 15 minutes so that I was hands free in the kitchen while entertaining. I reheated the spinach, layered it in the bottom of the bowl, topped it w/the pasta then salmon. I was looking for something healthy for a freind dealing w/breast cancer. She loved it & so did we!
