I made a couple of mistakes though that I felt could have made it a bit better. I cut the bread pieces too big and did not use day old bread. Next time I will make sure to use older bread and smaller pieces! I also did not chop the olives in half which I wish I would have done because sometimes a whole olive is too salty. It actually could be eaten as a main dish. It is light and flavorful. I did not give it 5 stars because I did not think that it was wonderful, but it was tasty and I will make it again. I did not have a grill pan so I browned the bread and artichokes in the oven on 350 for about 12-15 minutes. I think you could even use ready made croutons for this. I used 8 oz of frozen and a small jar of marinated artichoke hearts. I also used less oil (I think you can eyeball how much you really need) and added pecorino cheese. It was very very tasty! My husband and I loved this tasty "salad." (A 'bread salad' is my husband's idea of a good salad.)I used sourdough instead of whole grain (kids don't like whole wheat) and marinated artichokes to add flavor. I also made sure my bread was well-grilled to stand-up to the dressing. I the marinated artichokes turned out to be really unnecessary, as the basil and dressing had BIG flavor and I think whole grain bread would have added a nice nutty component. I will make this again! So fresh tasting, the bread crunches up when grilled, then becomes soft w/ the dressing (not crunchy like a crouton). Yummy yummy. This one was terrible. Little or no taste, the bread gets soggy quickly, and my family simply hated it. I threw the recipe out along with the leftovers. I couldn't think of a way to even improve it. It was sooo good. She used sourdough instead which I think was a good choice - I hate wheat. It's amazing how much the grilling does. I think a balsamic vinaigrette could be good too. I used kalamata olives and some marinated artichoke hearts from the fridge. No white wine vinegar in the house so didn't make the dressing, but it was quite light, filling, and tasty even without. |
