Great basic potato soup

I loved this soup and the consistency was great. I added a little cheddar cheese and sour cream to make it a "loaded" potato soup. Highly recommend! It's key to sautee the onions in the bacon grease!

I was looking for a simple, creamy potato soup- and found it here! I didn't use bacon (didn't have at the time) and used scallions (which I had an overabundance of)... and it worked out great. I didn't puree all of the potatoes, but smashed them with a masher, leaving them lumpy for some consistency. IT WAS DELISH!
