My hesitant husband, whom is normally a picky eater, at this very willingly. The flavor of the champagne sauce goes so nicely with the pork and the potatoes. My only complaint is that this recipe is listed as easy but it is not easy to make. I did make a small change-after the chops had browned. I pulled them out (left the shallots in) and added some butter and flour and cooked it a couple minutes. I then followed the rest of the recipe. I don't understand the comments about it being bland, but perhaps those cooks didn't season the chops with enough salt and pepper, as well as seasoning the sauce. I didn't have champagne, so I used white wine, and also used fat free half and half. The rustic potatos with the garlic were a perfect pairing for the sauce. My husband told me it tasted like something we would get at our favorite French restaurant. The combos are great - even allow for short-cuts. My recommendation is that the thyme is far too strong. As rosemary often does, it overpowered the other delectible flavors. Next time, I will half-again the tarragon, and half the thyme (maybe more). I think this will allow the carmelizing of the meat, and the richness of the butter, wine, shallots and pepper to come forth. If you're cooking the base-chop, and all you can smell is one ingredient - it's too much! Bon Appetit! The reviews for this recipe were all over the place! I borrowed the idea of the chicken broth (instead of chanpange or wine)from one & added more tarragon from another. My contribution to this is I added a half capful of Kitchen Bouquet to mine. Overall,my family enjoyed this & I would make it again. I used fresh herbs rather than dried and substituted chicken broth for the wine. Sauce needed a little salt and I let chops cook in the sauce longer until they were tender. My daughter that usually likes bland food thought it was way to bland. My husband, who likes spicy and flavorful food made suggestions all through the meal as to how I could improve it. We are going to try the pork fried rice from this show later this week. My family will let you know what they think. |
