I made these for a memorial day BBQ for out of town guests and they were outstanding! The only regret I had was that I didn't make twice as many for left overs! They were fighting over the two extra burgers I made. I will definitely make these again and again.

This is probably one of the best burgers I've ever had. There's just enough chorizo in them to give them a ton of flavor without being too greasy. I didn't use the mayo, but my husband said that brought the whole thing together (although I thought it was fantastic even without it!).

All I can say is OMG!!! One of the best burgers I have ever tasted. I could not find the oaxaca cheese, so I used monteray jack. This will definately be a staple at our house!

My boyfriend said that these were probably the best burgers he'd ever had, and he is basically a burger expert. Also, try and find Oaxacan cheese. It's so amazing, hopefully more stores will start carrying it soon.

This relish is delicious! I placed the relish over grilled ribeyes tonight and it was great. I will also use this relish for fajitas and omelettes too. Way to go, Ingrid!
Try Soyrizo instead of chorizo

For people hesitant to use chorizo try using El Burrito brand, "Soyrizo". It tastes just like chorizo but it's made with soy. Taste wise you can't tell the difference but you do have to add a little oil because it's not greasy like the real thing. I've made Soyrizo with eggs without telling people and everyone was fooled. But only use the El Burrito brand. The other brands suck.

I have 3 boys from age 21-17. they love spicy food and are great critics. Their comment was this is definitely repeatable mom ! The burger was moist and had a unique flavor with the chorizo added. You definitely need to make the red pepper mayo.

I cannot rave enough about this recipe! The burgers are SO MOIST, no matter how long you cook them, and the oaxaca cheese is GENIUS! The red pepper mayo is so easy to make, as is the avocado dip. Don't forget to make the sweet potato fries that go along with them...they are amazing. My friends are usually very chatty, and NO ONE SPOKE while they ate the burgers. They actually applauded me at the dinner table! I'm telling you...this recipe will ALWAYS be a staple in my repertoire. Thank you! Ingrid rocks!

THIS TASTY AND ZESTY BURGER WAS EASY AND QUICK TO MAKE. MY HUSBAND LOVED IT!I WILL ABSOLUTELY SERVE THIS THE NEXT TIME WE HAVE GOOD FRIENDS OVER FOR DINNER. I THOUGHT THE OAXACA CHEESE WAS A LITTLE EXPENSIVE, YOU COULD DEFINETLY USE MOZZERELLA CHEESE INSTEAD. THE ONION JALEPENO RELISH AND THE RED PEPPER MAYONAISE ARE TERRIFIC AND COULD BE USED ON MANY OTHER TYPES OF SANDWICHES.
