There's just enough chorizo in them to give them a ton of flavor without being too greasy. Try Soyrizo instead of chorizo 03/21/2008 at 04:17am User: Anonymous User Rating: For people hesitant to use chorizo try using El Burrito brand, "Soyrizo". It tastes just like chorizo but it's made with soy. Taste wise you can't tell the difference but you do have to add a little oil because it's not greasy like the real thing. I've made Soyrizo with eggs without telling people and everyone was fooled. But only use the El Burrito brand. The other brands suck. Their comment was this is definitely repeatable mom ! The burger was moist and had a unique flavor with the chorizo added. You definitely need to make the red pepper mayo. The burgers are SO MOIST, no matter how long you cook them, and the oaxaca cheese is GENIUS! The red pepper mayo is so easy to make, as is the avocado dip. Don't forget to make the sweet potato fries that go along with them...they are amazing. My friends are usually very chatty, and NO ONE SPOKE while they ate the burgers.
