I've never been a big fan of fish, but at least I found salmon to be "tolerable". Last evening, I printed out this recipe in the hopes of finding healthy alternatives to my usual regimen of red meat. What an incredible surprise! This is THE best salmon dish I've ever had! Flavors were so delicately balanced, and lent a wonderful note to the chargrilled fish (which, by the way, I prepared over a hot grill with mesquite chips added for a nice "wood smoke" flavor. Just magnificent!

This was delicious and easy to prepare, but instead of julienning the cucumbers, I just made shavings with a vegetable peeler and it worked fine. I didn't find wasabi powder in my grocery store, but wasabi paste worked well.

I don't really like fish, but we used fresh salmon and the taste from the marinade made it melt in my mouth. It was delicious and not too difficult.

I don't generally write reiviews but this salmon was too good not to. I made the salmon for the first time yesterday for a family gathering of 9. There were people actually moaning with each bite. I made it with Copper River Salmon (which certainly didn't hurt) but I think it would be equally great with other types of salmon. The sauce was rich and ginger and orange came through beautifully. My 3 year old loved it too. I made the teriyaki sauce exactly as the recipe indicated. One extra step I took was to boil part of the marinade for a couple of minutes, after I took the salmon out to put on the grill. I then served that in a gravy boat along with the meal. I also made the cucumber salad. When I made the recipe as directed, the flavors were too mild for my taste. I significantly increased the wasabi powder, mirin and rice wine. I probably increased them all by three times (though I didn't measure). The amount of sugar was fine. If I made it again I would start out with about 1 tablespoon of oil, taste it and then go from there. The amount of oil just mellowed the flavors too much. With the modifications we all enjoyed the salad.

Excellent recipe. It was easy, fairly quick and tasty. Just for those who might want to know...1 orange juiced, equals to around 1/2 cup of juice. My husband loved it and even my picky stepdaughter wolfed down the piece of salmon and went for more! Need I say more.... I made the recipe as specified in the directions. However I did not make the cucumber salad. This is a keeper recipe that I definitely be making all summer long. Thanks Ming for a great recipe.

I really enjoyed this dish. I was a little suspicious about a teriyaki sauce without mirin, but I thought the salmon marinade was wonderful. The fresh orange juice provided a refreshing twist to tradition teriyaki sauce. The cucumber salad was a nice complement to the salmon, although it didn't make much of an impact on me.

I made this last week and my husband thought it was absolutely delicious! The salmon was perfectly marinated in the delicious Teriyaki sauce they grilled to perfection. We didn't try the Cucumber Salad.
