So flavorful! I always have chicken breasts marinaded in Italian dressing in my freezer, so I used that for this dish. I love spicy food but did not have any peppers on hand. I just used a can of diced tomatoes with chillies in them, so that added the perfect hint of spiciness. I also used flour tortillas (don't have to heat them). I really want to try it again with Chipotle. I also just used a Mexican cheese blend that I had on hand. This recipe is very adaptable. Even spread over two pans of enchiladas this was WAY too much. If you like really hot food then cut the amount of the peppers to 2 over the two pans but 4 is uncomfortably hot to not edible. I was raised on Mexican food and it is my favorite type of food so I was terribly disappointed with this result. We added a few extra green chiles which made it have a lot of heat.....one thing we would do differently the next time is to add extra enchilada sauce, the sauce really soaks up when you bake it for the 15 minutes. I did cut back on the chipotle chili to two instead of four because I was unsure of the heat factor. Next time I'll split the difference and use three. I also doubled the amount of cheese and added half of it to the filling itself. I added some chopped cilantro as the filling simmered. I had to let the filling simmer a lot longer than the recipe stated due to the juice from the tomatoes. The filling was to wet and would have made the tortillas soggy so I had to let most of the liquid cook off. The recipe makes quite a bit of filling so I made 6 enchiladas and then split the remaining filling into two batches and froze them. Now I have two easy meals at a later date. This recipe reminded me of their style of cooking; hot, not sweet mexican food. I used a red chile sauce, eliminated the corn and actually made this a casserole instead of rolled enchiladas. I layered the chicken mixture, with torn pieces of tortillas, sauce and cheese; alternating. It was great. Too spicy for my girl, because of the red chile sauce. A great, easy recipe. Although, it is a little time consuming... don't make on a night short on time. However, everyone that ate them told me they could stand to be spicier and I agree. Some changes I would make would be to add jalapenos or maybe even replace the chipotles with jalapenos. They are very spicy (which I like), so if you don't like a lot of heat, I would suggest cutting back to 1 or 2 and discarding the seeds when you chop them. I enjoy this dish so much that I make up batches of the "filling" and freeze it. When I get a craving for an enchilada, I simply thaw the filling in the microwave, fill a corn tortilla and top with the enchilada sauce and cheese. Pop it in the toaster oven or microwave and there you go! I top with sour cream and guacamole (or just avocado) Wow! The prep time was more like 75-90 minutes, since it takes a while to seed both the whole green chilies, and MUCH more time and efford to seed the chipotle peppers. Those alone must have taken 15 minutes to mince and seed. Otherwise, the only other thing I would recommend is using diced tomatoes that are DRAINED, and not stewed tomatoes directly from the can with all the juice...the mixture in the end kept draining juice when trying to fill the corn tortillas for the 13x9 pan, and it was still so hot when doing so, that it dripped down my arm and felt as though it burned me several times. For as much as it costs to purchase all of the items, and time and effort involved, I'd probably pay to buy the meal at a good local Mexican restaurant, instead of doing this all over again. These did taste pretty good, but in my opinion, definitely not worth the time and work... A little bit of work, but well worth the results. Instead of dipping the tortillas, try brushing the sauce onto them with a pastry brush. I boiled the chicken instead and omitted the 5 canned green chiles and 4 chipotle chiles. I only used 1 chipotle chile and 1 fresh chopped green pepper. Even with this, the dish was a little spicy- but definitely bearable to eat. This was simple to make and I was impressed that the filling stayed put when I rolled the tortillas and when I took them out of the plate!!! It looks as good as it tastes! Will make it again. Because of other people's reviews I added only one chipotle chile and to save time I got a small can of pre-chopped green chiles and added the whole thing. By just adding one chipotle chile, it added a slight amount of heat but nothing at all overwhelming. Also, I used flour tortillas because no one in my family likes corn tortillas and they were a wonderful substitution. I also think if anyone wanted to add black beans to this, it would be very good. These turned out really great and didn't take much work at all. I used rotisserie chicken from the store to cut down on cooking time and after shredding it, cooked it in the skillet for a few minutes with the spices. Being from Texas I didn't find the dish overly spicy at all. The sour cream compliments the heat in the enchiladas. I will definitely make these again!
