To make it a little healthier I use olive oil instead of butter and cut the cream a bit. After I take it off the heat I add a handful of feta cheese and some kalamata olives and/or sun dried tomatoes. It was creamy enough to coat and the kale gave the dish some great color, texture, flavor and vitamins. I also tossed in sliced sun dried tomatoes. Mmmm.
