My sister-in-law asked me to make it again at our next holiday gathering, so I used frozen corn- 1/2 white and 1/2 yellow -and no one knew any different! Be careful of tumeric - the 1st batch I made was glowing ( but it still tasted great!) I also used only 1/2 the called for rosemary and added milk as needed to thin things out. I had no tumeric, so omitted it and it was still delicious! Also--if you have no fresh rosemary, put some dried rosemary in a piece of coffee filter and tie up and use that instead. The recipe is very simple to follow--hardest part is husking and cutting the corn off the cob! Well worth the effort! My family members still comment about how good it was when I made it for 4th of July. I used the recommended amount of Tumeric, and it seemed a little neon, so I added a little more liquid, and cooked longer to tone it down. I also have used frozed thawed corn instead of fresh and it turned out just as good; just mash it a little, and add a little more sugar to taste. I used a combo of seet white corn, and regular cheap yellow corn to avoid it being too sweet. For me, the rosemary was a little strong the first time, so I have since used less; just know that you will definitely taste the rosemary in this dish (I have noticed sometimes kids aren't too jazzed with the rosemary.) Also, the cornmeal thickens this beautifully, but know that there will be a slight cornmeal mouth-feel when you eat it. I used a little more tumeric than listed by accident, so beware of the strength of the yellow. I also used a sweet onion and added about half the sugar since my corn was very sweet (fresh corn that I froze a while back). I added a pinch of nutmeg and a bit more salt than listed. My husband, 15 month old son and I finished the 3 cup yield of this recipie. We were trying it before Thanksgiving...Good thing I tried it first!!!! I'm going to have to quadruple this recipie for My small party of 8! :) FYI: I used 1 bag Green Giant Super Sweet Niblets (frozen corn). To replace the pulp and corn milk that comes from using the fresh corn on the cob I pureed 1/4 c. corn, 2tbs. half and half, and 1/4 tsp. dried rosemary together (in place of fresh rosemary). This creamed is second to none in my book (could be cause it's fresh!:)). Sweet, with a great onion afternote. The rosemary adds nice flavor and the cream makes it very smooth. If your mind conjures up images of the slop from a can that your Mom called cream corn, trust me that this is nothing like that at all. I prefer more Tumeric for the wonderful color it gives to the dish. Be prepared to wish you had made a double portion, because everybody is going to want seconds. Wonderful recipe. I didn't add the rosemary because I didn't have any on hand, and the market was out, but it was still delightful. I do think that it really needs something "woody" though. Maybe thinly sliced mushrooms...back to the kitchen! Oh yeah - and you really need a good sharp knife for this. Mine was dull and I got rather tired. Now I've made creamed corn before but never this good. His tips on maximizing the sweetness of this dish worked excellently and the use of cream, instead of milk or half and half, made the cream sauce extremely rich. But what really set this dish apart was the bruised rosemary which complemented the dish perfectly. A few changes: I used stone-ground cornmeal, and its texture did come out in the final product; I might use finely ground meal next time unless I want to repeat the rustic effect. Also, next time, I'll use half-and-half instead of heavy cream....and make up for it by tossing in some parmesan curls. My corn was already roasted, so I used it as is. I omitted the rosemary entirely, and substituted curry powder for the turmeric, since I couldn't seem to find that (I know it's there somewhere, though!). I also didn't have any heavy cream, so I used 3/4c. whole milk and a 1/4c. sour cream. All in all, I don't guess I really made the same thing at all! But I used the same methods, and it came out beautifully. I think the rosemary overwhelmed the dish. Maybe I used too much... I tend to think not, though; I did it exactly like they had on the show. Thus, next time, I think I will add the rosemary later in the cooking process, so I can taste more corn and less herb. Also a warning, this recipe doesn't really keep well in the 'fridge, with the corn meal in there, it soaks up more juice and ends up being a block. Not a bit deal, just add some milk and microwave... but I would like it to be a bit looser. So make sure to cook this right before serving for best results. I'm going to try some modifications to see if I can get it to where I like it. All in all though, not bad at all.
