My boyfriend made the pork chops for me last week in an effort to convince me he is as cool as Tyler Florence. They were fantastic!! Excellent flavors, and the pork was perfectly prepared.

I just made this recipe and it wasn't nearly as difficult as I thought it would be. I couldn't find pork chops as thick as the recipe required, so I just went with one that was a little less than an inch thick. i didn't use as much prociutto either, and I'm really glad--it was pretty salty.

I rate it 10 stars. This is the best recipe in a long time. The subtle flavor from the brine and the salty with sweet contrast is awesome. Even though I decided to make substitutions instead of going to the market this recipe was a hit with my family (and not all members like to eat out of their "comfort zone"). I used pork tenderloin and a mix of Jarlsberg cheese, provolone and shredded mozzarella. I also used a mix of bacon and sliced ham. I chopped all of stuffing ingredients really small and stuffed the tenderloin. My husband had not even finished his plate and asked me: When are you making this again? I did not make the polenta squares since I had traditional Cuban tamales and figured it was a similar effect but with more seasonings. It was great! I am sure I will make this for our next dinner party.

Wow. This pork chop receipe is the best I have ever made. I substituted bacon and provolone for the fontina and prosuito (The specialty market is a 45 minute drive) and I used some chinese 5 spice in the brine in lieu of the allspice berries and cloves. The flavors were amazing. Tyler has another winner

I changes the brine to exclude the cloves and replaced it with a small amountv of pickling spice (which has cloves in it already). Had the butcher cut some inch and half bone in chops for me and it was outstanding. The polenta squares were a little hard to grill as the crust wanted to sepaerate from the now warmed centers. Flavor was still very good

I saved this recipe for Valentine's night dinner. I always love Tyler's receipes. This time I was very disappointed!!! The pork chops did not have any flavor and it took longer to cook than was listed on the recipe. The grapes were ok and the sauce was awful. I have already thrown away this recipe.

I made these one evening for my husband, 10 yo son and myself. There were 4 chops but no left-overs. I love the red grapes with them. Most tender chops as well.

The recipe is very easy to prepare. Excellent taste. You could also use this preperation for veal or chicken. I'd recommend you do the pork or veal at a med. rare or no more than med.

Made it last night because my family normally do not like pork chops and though this might change their minds. We all loved them, the grapes were a wonderful departure from apple sauce. This recipe will go in my file for a dinner party. Will be a keeper.

I had a dinner party, I decided to try this recipe, everyone was delighted & surprised that cooked garpes could be so good, the pork was tender and cut with a butter knife, there wasn't even leftovers. The recipe was easy to follow, as well as, delicious. I even received kudos and a healthy Tip!!

Brining makes all the difference in these pork chops. They came out so succulent. The flavor was fabulous and both my husband and youngest son gave it a huge thumbs up!! It was a really easy recipe.

I served this to guests without a trial run and they were delighted. The Fontina & proscuitto combination was fantastic and the grapes really pulled it together with just a tad of sweetness. Also because they went in the oven for only 7 minutes, they stayed crunchy versus getting mushy. I was a little short on sauce so I would recommend 1 cup for chicken stock. I did, however, buy prepared polenta and grilled it with a little olive oil (pure laziness).

My husband and I saw the show with both of us being intrigued by the recipe...and it didn't disappoint! We will do it again. The pork was wonderful, lots of flavor with the grapes. Following another review about the polenta, I cut the ratio to 6 cups water, 1-1/2 cups cornmeal and used a 9x9 pan which was plenty for 4 and firm enough for grilling. Great recipe.

I made the polenta using this recipe - which calls for a 4:1 ratio of water to corn meal. It never did solidify even after several hours in the refrigerator. I checked several other polenta recipes and they say "soft polenta" uses a 4:1 ratio, but if you want to grill it use a 3:1 ratio.
