Watercress dilema

The watercress is a lot of work if you buy it fresh, and there is too much used for 2 entrees. It makes the entire dish very bitter.

This salad is delectable. Sweet fruit mixed in with the creamy curry flavor and tender chicken. This is a wonderful combo. It did take me longer to put together than the 10 minute prep time, but worth the effort.

My husband usally does not like to eat Curried Chicken Salad because it is usally 'swimming' in Mayo! I did not use as much mayo as the recipe called for.I used my homemade curry powder and I served this on a warm french bread. He was stunned and very enjoyed the meal Thanks Again Emeril

Emeril is a perfectionist so I don't have to be. Every ingredient in this recipe was in perfect proportions. Often, chicken salad is flavorless. My taste buds were satisfied with every bite. Amazing. The fruit and the greens were a pleasant surprise. The peppercorns and the shallots gave it 'kick'. The honey, lemon and lime juice, CORIANDER!!! The man is an artist! He is the best for a darn good reason. Enjoy!
