I am sorry I did not read the reviews before making this cheesecake. I followed the on-line recipe exactly and my cake had cracks and craters throughout. I was making this for my Husband's birthday and now I will have to buy one at the grocery store. I learned my lesson.

I've been wanting to make a cheesecake from scratch for awhile now, and my mom's birthday was coming up so I thought why not? After looking and looking I finally decided on this recipe, and it took me a little longer to make than it should have, but it turned out great. I didn't have kosher salt so I just used regular and couldn't taste a difference. I also had to use regular instant coffee instead of espresso because my grocery store didn't have it, and that was fine. I took it out of the oven a few minutes early because it started to crack, but most of it went away and I covered the other cracks with the topping anyway. So over all, it was a big hit and I would deffinitely make it again. Everyone loved it. No complaints.

For a first time cheesecake baker I thought I did amazing. I love cheesecake and pride myself on having tasted some of the best. I shared slices with my husband, best friend and mother in law (all people who are honest about my baking) and they loved it. Few changes: Used sea salt (few twists of grinder) Used unsweetened chocolate and added sugar (few tablespoons) Used local grocery stores instant coffee. Very rich but not espresso rich or bitter. My cheesecake did crack but I am not so much about looks but will utilize the waterbath method for future endeavors.

if your pan lets water in for cheesecakes put foil on bottom of pan so it goes up the sides before the water bath...it works great for keeping water away

I made this cake despite the negative reviews, and I'm so glad I did - everyone loved it. I don't agree with the "lack of flavor" comments, it had a ton of flavor. The only things I changed were using a chocolate graham crust and all vanilla extract, no almond. I made it in a water bath, and had no cracks. It is really great!

I've just finished baking this cheesecake for a dinner party tomorrow - it's one of the worse results I've ever had!!! I'll definitely read reviews before baking from here on. The water bath is a must. There's huge cracks in my cheesecake. Fortunately, I left out the salt by choice, but I'm not at all confident about presenting it. I LOVE Ina, but this recipe and probably the cake will end up in the trash.

This cheesecake is very time consuming and certainly NOT worth the work and cleanup. Our friends were gracious and they struggled to finish the piece they were served, but it was embarrassing. It looked good, the consistency was good, but the flavor was lacking. Not enough chocolate, not sweet enough and way too much coffee. Maybe half the coffee, use more chocolate and more sugar. OR try another recipe.

Saw Ina make this on TV--read reviewers' comments before i attempted it. I made it exactly as set forth in recipe and on tv (and followed other tips such as putting pan of water in the oven along with the cheesecake). It cracked horribly on the top, and itwas not as flavorful as other BC recipes, a clear disappointment. Was going to take this to an event--thank goodness i experimented in advance!

This is a great recipe if you do like I did and read the reviews first. I read them after my trial run cake I made before making one to serve at my friend's wedding. I had forgotten the salt (thank goodness) and the cake cracked but it was still great. I made the second cake in a water bath and it was perfect. Oh yeah, I used a chocolate graham cracker crust. It is now my official chocolate cheesecake recipe.

I took out the salt. I was unable to do a waterbath b/c my pan lets water in, but I put a pan of water on the rack above the pan. I used really good chocolate and cream cheese and served it for Easter and it was a homerun. All the women at the party wanted the recipe. Thanks for the suggestions, or it would have been a nightmare.

I feel the same way as many of you disguntled cooks, but to "anonymous 2/11/08 @ 9:36, we can do something.....we can stop watching!!! There is also an address in NYC for other issues. I am currently writing a letter to them,& sending it there. I have several complaints with the editing errors, as well as TV issues. We can make a difference...power in numbers!!!!!

Omit the salt from the recipe. You don't even need the ganache. The cheesecake is excellent. Rich, creamy, and the right amount of espresso - satisfies the pickiest cheesecake eaters. Worth the calories!

My cake turned out great! No crack and very moist! My only modifications due to ingredients and tools on hand: 3 cream cheese blocks, 3 1/2 large eggs, and a 10 inch spring form pan. I cooked it about 50 minutes, I checked to make sure it was set. I followed all directions and I'm very happy with how my first cheesecake turned out. I just wish it had more flavor: chocolate, espresso, and cinnamon are very subtle.

I made this for the first time exactly following the recipe. The cheesecake cracked right down the middle, the instant espresso did not mix well into the cheesecake, and the crust was sort of blah. I made it a second time with these alterations - mixed the espresso with a tablespoon of hot water so it was no longer in granules, switched out the graham crackers for lady fingers (following the rest of the recipe to make the crust) and made extra ganache to cover the cheesecake entirely. EVERYONE wanted the recipe and it was a hit (-:

We love this cheesecake, not overly sweet. I agree that a pinch of kosher salt would be ample (1/2 tsp is too much). I love this website because of the "Rate & Review". I always read the review before I try any recipe. Thank you to all of those who did the review for this recipe.

I wanted a special recipe for a special evening with friends and this one was a home run! It has a wonderful rich texture with a hint of coffee flavor. For added drama, I added a raspberry sauce to the bottom of the plate with fresh raspberries on top. Wonderful!!

The cheesecake is delicious but I had to resort to the water bath method...set the springform pan in a roaster pan or large disposable tin pan, pour enough hot water into the pan to reach 1/4 the way up the springform pan. This is easier if you put the pan in the oven first and then pour in hot water. Bake at 375 degrees for 1 hour. The water bath method cooks the cheesecake and keep the oven moist so the cake doesn't crack. I tried Ina's method, but the middle did not cook and the edges started to crack. Other than that, do NOT add salt to the recipe, and it turns out delicious.

Please folks, learn that Kosher salt is not as "salty" as regular table salt. The recipe calls for KOSHER salt. I haven't made the recipe yet but had to rate in order to post....therefore, middle of the road 3 stars.

I watched the cake being made on TV and went and bought all the ingredients. Expensive tho they were, I felt the cake would be worth it. This was not so. My cake cracked all the way down the middle and was very unimpressionable to say the least. I felt very silly when I had to present it to my sweety for his Valentine dinner. I can make cheesecake look(and taste) appealing but not the way it states to bake it. This recipe is going in the trash.

Too salty, Looked beautiful. Texture was good but I'll be making some adjustments before making it again. When ingredients (cream cheese) are sold in 8 oz boxes, please don't say 1 & 3/4 # just say 4,8 oz boxes, plus etc.

I made this recipe exactly how it appears here except I cut the ganache down to a fourth of what was listed and it turned out great. I didn't have kosher salt on hand so I used regular table salt and you couldn't taste any salt in the cheesecake what so ever. Everybody that tried it thought it was bought from a bakery because it tasted so good.

I saw the show and thought WOW, I have to try it. I wrote the recipe down as she Ina said it. I thought that I would get the recipe on-line just to make sure that I had not missed anything. I did not compare to what I had written. The cake is a bit salty and I have enough Ganache left over to cover my husband's SUV! I am disappointed but have learned a lesson!

Folks, no matter how much we complain nothing will be done about the many, many errors in posted recipes - it goes for all the hosts. There is no "editor" only the web master who probably does not error check - only cares that a (any) recipe is posted. Unfortunately, FN has no email address where we can complain. They do not read these reviews.

As a cheesecake lover I knew I had to try this after seeing her show. I am glad I read the reviews and rewatched the show before I did. I eliminated the salt the recipe calls for and it turned out wonderful. It was sinfully creamy and moist! I suggest you try it but don't use the salt!

Food Network: Please, errors should be corrected prior to posting a recipe on the web site. I wanted to make Ina's Chocolate Espresso Cheesecake with Ganache for my Valentine, but other reviews regarding the errors made me change my mind. I love Ina and her recipes and look forward to her 6th book. Hopefully this recipe will be in the cookbook. Recipes not tried cannot be rated.

Yikes, I didn't watch the show as I had a wedding to attend but on Sunday I decided I would make this cake for a brunch with some friends from the wedding who dropped by. Should have read the reviews first, my fault. The cake was salty and it made too much ganache compared to what was in the picture. I love Ina's recipes and thought this would be a winner as well. I'm sure it is if it's posted correctly. I will have to watch this afternoon to see how she makes it. I had to go to Safeway and buy a cheesecake before they all came.

If I hadn't actually seen Ina Garten prepare this cheesecake, I would have blindly followed the online recipe and goofed. Who knows how it would have tasted? There are often discrepancies (errors) between what the chef does on the show and what shows up in the online recipes. I've noticed this for Paula Deen's recipes as well. Food Network editors, we all deserve a better effort, especially Paula Deen and Ina Garten (and probably other foodnetwork hosts as well) for whom these recipes represent a life's work. As for us, your readers, many of these ingredients are often expensive, and we don't want to waste our time and money. Please take care when posting these recipes online. Thanks.




Recipe errors

For anyone making this for the first time, the written recipe is incorrect as compared to the way Ina made it on the program. I just watched the program and compared the two as she went along. She did not use ANY salt. Also, for the ganache, the ingredients are 1/4 pound semisweet chocolate and 1/4 cup heavy cream NOT 1 1/2 pounds chocolate and 1 1/2 cups cream. The cheesecake itself looked fabulous, but the posted written recipe not so much.
