Instead of the andouille sausage called for in the recipe, we chose Emeril's Chicken and Apple gourmet smoked sausage. It added just the right taste. The ingredients were simple but really made the gumbo pop. The thing I would've changed about the instructions was the let the user know how long to simmer and stir the roux. We did it for about an hour. We skipped using oysters, but we did use the gumbo to top bowls of white rice.
