Bobby's recipe is already great, but here are ways (read: substitutions) you can kick it up yet a few notches more (don't worry, you're still staying within that "southern" theme - somewhat): 1) Instead of using 100% beef, use half ground pork and half 15% fat ground beef to keep the meat loaf moist and "together" during molding 2) Substitute Jack Daniel's Spicy Southwest Mustard for the regular mustard called for in the recipe. This gives the meat loaf a subtle-but-there back-heat kick 3) Substitute low sodium beef stock for the water 4) Rather than using regular tomato sauce, try garlic-infused tomato sauce to add even more flavor 5) Serve with dashes of chopped parsley and chunky mashed rose potatos. Enjoy with a fruity, rich Cabernet Sauvignon. Add a chopped fruit salad of juicy red anjou pears, sweet gala apple, bananas, and shredded dried coconut flakes - Mangia! Note: Every oven is different - mine finishes this meat loaf in exactly 1 hour. So watch yours carefully! I also baste mine about once every 15-20 minutes. However, with a new hubby in my life, I've found that I have to make some changes in my food choices. We had this meatloaf for tonight's dinner. It's definately a very flavorful meal. I added a couple of cloves of garlic and sprinkled some brown sugar on the top of the meat loaf before putting it in the oven. As one reviewer said earlier, it did fall apart. However, it was very good. Next time, I will chop the onion a little smaller and maybe try a little more bread crumb. It is better than any other meatloaf I've had. It is great as is or w/Italian breadcrumbs, too. This a simple, traditional meatloaf recipe that I bet you could find in most American family recipe archives. I was looking for something reminiscent of what my Southern grandma used to make, and it was as close as I've gotten yet. Makes good sandwiches, too. I had been told to use oatmeal, however it didn't go over well with my family. So had to shop for another recipe. Found this one and tried it. It's so very simple and WOW was it a hit. I'll take all the help I can get since my husband does most of the cooking and is exceptionally well at it. It makes it difficult for the things I cook to be worth comparing but this one did the trick!
