Maybe I did it wrong. The sauce ended up being more runny than creamy. I'm sure to give this one another try, to see what might of went wrong. Timewise this is a very fast way to make hollandaise sauce. Don't use to much lemon juice. I know some of my guests prefer less acidic flavour. However, I liked it with a little more. I tried this version of the sauce for making eggs benedict.

This is the best Hollandaise I've ever had. Just the right tang! Very easy to make. I did not add the hot sauce----I wanted authentic sauce. Don't be afraid to make this, it's worth it. We had it over asparagus on Easter.....mmmmmmmmmmmmmmm!

This is the only Hollandaise Sauce that my husband will eat, and he will cook it for himself too!!!
