The sauce ended up being more runny than creamy. I'm sure to give this one another try, to see what might of went wrong. Timewise this is a very fast way to make hollandaise sauce. Don't use to much lemon juice. I know some of my guests prefer less acidic flavour. However, I liked it with a little more. I tried this version of the sauce for making eggs benedict. I did not add the hot sauce----I wanted authentic sauce. Don't be afraid to make this, it's worth it. We had it over asparagus on Easter.....mmmmmmmmmmmmmmm!
