The sauce that is served with this dish is quite spicy. I used it sparingly as a dipping sauce for the fries. I agree with a previous review that I would have liked to have seen the recipe presented with the fried yucca, the way it was made during the competition. I have made fried yucca myself and tried in the Pollo Tropical restaurant chain (a Florida restaurant chain?). But I guess sweet potato is more commercially available and acceptable to the consumer. Also, I loved the herbs that were used on top (it reminded me a little bit of the Venezuelan "guasacaca"). The dipping sauce was ok, but I don't think it is that necessary to use for this recipe unless you like to dip your food in spicy-hot sauce. I liked the fried sweet potatoes; however, I think the yucca root, as the original recipe states, would have been much better. I am going to try it at home. By the way, huatay herb is called black mint pepper by a Peruvian store. Good but alot of work.. 03/10/2008 at 10:46pm User: Stella from Las Vegas, NV User Rating: This was interesting, I managed to find all the ingredients but did have to look in different stores and online to get them, I made it but when it came to marinating the chicken I did pull up the skin just a bit to get some of the marinade in between the meat and skin, I baked it covered at first then the last ? hour I took off the cover to allow it to crisp up a bit, it came out great, very moist & a bit spicy but that?s was fine with us.. The Yucca root however was a different story, I boiled it and cut it like instructed (even though it didn?t give time as to how long to boil) I couldn?t get past the funky smell of the Yucca root, needless to say that didn?t make to the dinner table, neither did the sauces I didn?t bother making them cause I tried this chicken at Fridays and DID NOT like the sauces.. I?ll probably make this again but not anytime soon, and will most likely modify it just a bit.. I hope TGIF used all of the same ingredients that are called for in the winning recipe because I am trying to locate those now and it would be a real downer for mine to taste different from theirs. I highly recommend that you try the chicken at the restaurant even if you are not interested in making it yourself. Having said that, I would DEFINITELY forgo the dipping sauce. The chicken breast was moist and tender, but cooking in the covered pot means you do not get a crispy skin. The queso sauce is grainy, like a mole. Just not my favorite texture, and the other sauce is so oily it began to separate while being served. The flavors are interesting, but I could not get past the grainy and oily sauce. To everyone that is looking for the ingredients, look in your local Latino or International Markets, and you will find them. Some of the regular grocery stores have them also. If you absolutely cannot find them local, try ordering it online from www.amigofoods.com. It will be under Peruvian Foods. Now, as far as if it is the fresh herb "huacatay" verses the paste...trust me, it does not make a difference. The chicken will taste great no matter what version you use. Too bad too because it looks and sounds so good. The more I watch the Food Channel the more I am tempted to move to Florida where my daughter lives so I can have better access to different seasonings. Around here you find LOTS of salt and pepper but very limited on other spices. Gathering the ingredients can be a bit troublesome for beginners but definetely worth the extra effort. My suggestion is to keep making it time and time again until it becomes automatic... I thought it was important that the ingredients be accessable and I have yet to be able to try the dish. I live in a large Latino community so I am surprized these are things Ive never heard of. I'll keep looking but as I get more and more frustrated it will have to be better than fabulous. All ingredients were in the latin section of my regular grocery store. I used huacatay paste (also labeled black mint), achiote powder, and aji amarillo paste since fresh wasn't available(1 tablespoon, didn't want it to spicy). The huacatay paste smelled so bad that I almost left it out, but fortunately it didn't taste like it smelled after cooking. It was definately worth the effort of looking for the ingredients. Huacatay Herb is often use in Peruvian dishes, you can find this herb in Indian markets here in America, the people from India call it "Black Mint ". Since I did not find Peruvian Yellow Chile, I use a mix of yellow sweep peppers and banana peppers. I also don't know what form of achiote/annatto to use. I looked up the ingredients online and I know what the ingredients /are/ but I still don't really know what forms to use them in or what they look like when I buy them, etc. Also where do I buy yucca? Do they sell it at common grocery stores like Albertsons/Vons? I am determined to try this recipe it looked sooo good. Any help please?
