Sounded like old-school diet food to me-flavorless. I'm so glad I took a chance. The scallions, cider vinegar and olive oil are what makes the dish. It was also easy to make. I left out the red pepper due to personal preference. In the end it was worth it because the dish is healthy, you can save it for later and looks very appealing. I followed the recipe pretty closely other than to add a little more lemon juice (tossing the apples in a bit more also to make sure they wouldn't turn brown), and a bit more vinegar. Oh, and I toasted my walnuts. This is light, refreshing and so healthy! I recommend this recipe highly. I am not bragging but I am an experienced cook and know how to follow a recipe. This was absolutely not edible. My husband and I both gagged and had to throw it down the disposal.
