I was told this year they were ALL looking forward to the HOT carrots! The 1st time I made it I made as directed...sorry, NOT hot enough!! Yes, CA ppl like things HOT! Besides its GOOD for you! So, now what I do is get a bottle of pickling spice ...follow the recipe, add the whole bottle of pickling spice with the other spices MINUSE the crushed chili peppers. I also DOUBLE the recipe,(why I add the WHOLE jar of pickling spice). Put the carrots in the jar, filling. Then add dried "Arbol Chili Pods" ALL over, anywhere that has some space! Makes it look pretty and some ppl enjoy just eating the Chili pods!!! Can get at any CA grocery store. Then follow the rest of the recipe. I have also used the SAME recipe and used hard boiled eggs!! NOT MY fav...but to each their own!! I just give what ppl like. Yes, the SMELL of the vinager is a bit much, but here in So. CA I just open the doors and windows!! Thanks Alton!!! GREAT recipe!! We let them sit between 1 -2 weeks and they just have enough zip to make things interesting. Highly reccommended as an appetizer or party side dish -- great for dieters too --- lots of flavor for very few calories! Cider vinegar is not the way to go. Perhaps regular vinegar would be better. I simply vary the amount of sugar, add some white pepper, cayenne pepper, and substitute 1/2 of the cider vinegar with white vinegar. It was my first pickling expirence and I found them very easy to make. The hardest part was finding an appropriate jar to store them in. And of course waiting a week for them to pickle. They weren't as hot as I expected though (I was afraid they would be to firey but they turned out to be perfect). I doubled the brine to soak 2 full pounds of carrots, and they came out pretty well. We bought some dried chilis at the store, and are now wishing we dropped a few more into the brine. To be fair, our chilis were smaller than AB's on the show, so maybe that was the problem. When making these babies next time (which we will), they will be much more fiery. Sweet flavor is there, so if you aren't into that, then move along. Bottom line, though: VERY easy. I think with a slight adjustment it will be perfect though. Didnt have the whole dried peppers so I just added more minced dried. I think this is a good starter brine that could be modified to your taste. I won't mince words. There are only three foods I like less than carrots. They are Coffee (yea I know Im odd), Calf and Chicken Livers (Duck is another matter) and asparagus. Having said that, these carrots are absolutely amazing. I can eat them like candy.
