As the boyfriend said, "You actually made pork that's moist. That's impossible." My only changes were to (1) butterfly the pork chops so there's more surface area and (2) drizzle some chicken broth over the chops before putting them in the oven to make them moist. I looked at the clock at one point and realized that in about 55 minutes I had prepared these 4 dishes and we were just about finished eating. Emeril's dishes aren't usually that quick to prepare. The shortcut I took was with the greens. I just opened a can of Glory Foods Seasoned Southern Style Mixed Greens and heated it. The rest of the menu was exactly as Emeril listed. I was amazed at how good everything was - and how well each dish complemented the others. My husband added cinnamon and sugar to his sweet potatoes; that's how he prefers them. I was so thrilled with the meal that I'm making it for company next week!
