To the "Are U kiddin me??" comment: did you even try it? It is ridiculous when someone reviews a recipe without even trying it first. If you don't want to use pigeon, use another bird, like I did. The flavours blended beautifully. It was complex and satisfying. Everything turned out perfectly following the directions as given. (I just had some of the Cornish game hen meat left over because they are bigger than pigeons, perfect for sandwiches the next day.)
